Garlic Pepper Noodles

1 package of pasta – noodles of your choice
2 T smoked garlic olive oil
4 cloves garlic, minced
2 red bell peppers
2 yellow bell peppers
1/2 cup chicken broth
1/2 cup white wine
black ground pepper, to taste
  1. Cook and drain pasta according to instructions
  2. Heat oil in large wok or skillet. Add garlic and saute about 30 seconds.
  3. Add peppers, saute for another 2 minutes or so.
  4. Add chicken broth and wine, bring to a boil.
  5. Turn heat down to a simmer and cover. Simmer for about 30 minutes or until the liquid has cooked down 3/4 of the way. Liquid should be thick, not watery.
  6. Toss with noodles. This dish is good hot or cold – often tastes better the next day after the flavors marry.
